I realized the other day that is has been far too long since I first posted anything on this site. I am now done teaching until January 2012, when I will hopefully be back at Camosun for round 2. It has been pretty tough juggling my first semester of college teaching with my normal work load, and I am still catching up on a few things. I will post some reflections on teaching on the PT Performance Training blog shortly, if you are interested... Despite the fact that things have been a bit crazy around here in the last few months (OK, a bit is certainly an understatement... haha), the work on the book continued and I still developed and tried new recipes. After all, a girl has got to eat properly, right? Here is one of those recipes. Quick, easy and delicious!
- ~2 cups kale, finely sliced - I used 1 cup purple kale and 1 cup green curly kale. There are so many different kind of kale out there and I have yet to find one that I didn't like! Just use the kind you like best.
- 2 carrots, grated
- 1 tbsp dulse flakes
- For the dressing, mix 2 tbsp plain Greek yogurt (BTW - 0% plain yogurt isn't Greek yogurt, regardless of what the label might say...) with 1 tsp macadamia nut oil (or EVOO), juice and zest of 1/2 lemon.
- Mix kale, carrots and dulse flakes. Toss in the dressing and your done. Yes, its that easy!
- If you want the kale to be a bit softer, instead of adding the juice of 1/2 lemon to the dressing, 'massage' it into the kale and let it sit for a few minuted before adding the rest of the ingredients and the dressing.
