Oh, hi! I know what you are thinking - It has been a while! My athletes have been harassing me a bit about posting recipes on more regular intervals... Life has been busy and sadly it has taken its tole on the whole blogging thing. It has been a bit over a year since I moved to Vancouver and I can safely say it has been one of the best decisions I have ever made, on both personal and professional fronts. Not a bad view, eh? Vancouver is a beautiful city, that is for sure! Both of the pictures below were taken from the Cypress mountain lookout.
It is also the middle of spring, which is my favourite season. This year, spring changes have been more growth like rather than changes, in contrast to last year! My junior / development squad has been getting better and better, the AG athletes are awesome and I am bike fitting and helping athletes with their nutrition a lot. It has taken a bit of time to adjust to a new work load, but I think I have it under control now.
Also, I am a little bit obsessed with cherry blossoms...
I guess the point of this was posting a recipe, right? So lets get to it.
Nice and easy salt 'n vinegar coconut chips! Seriously addictive... They take no time to prepare and make for a great little snack.
Salt 'n Vinegar Coconut Chips
- 1 cup coconut ribbons (unsweetened)
- 1 tbsp apple cider vinegar
- 1 tsp sea salt
- Pre heat oven to 300 degrees
- Mix coconut ribbons with vinegar and salt
- Spread evenly on a baking tray
- Bake at 300 degrees for 8-10 minutes, until golden brown. Be careful, they can brown fast... So keep an eye on them!
