Ginger Loaf

We moved a few weeks ago. Despite the fact that we only moved within a kilometer radius, it was a pretty tough move as we moved out of a 4 bedroom house, where my office was as well, into a 1 bedroom suit. I've realized you can accumulate a lot of stuff that you don't really need, for no good reason! I think the hardest part of this move was separating our home and my office. Its nice to be able to walk to my office (its 300m away from home), but when moving, everything seemed to be all over the place! Oh, and I have a commercial grade treadmill. To help us move it, I bribed one of the NTC triathletes (Matt) with baked goods.

Here is the recipe for the loaf I baked him. Apparently it was gone within a couple of hours...


Ginger Loaf

 

Ingredients

  • 2 cups + 2 tbsp almond flour
  • 5 tbsp arrowroot powder
  • 3 tsp aluminum free baking powder
  • 1/4 cup coconut sugar
  • 3/4 cup almond milk
  • 2 eggs
  • 1/4 cup molasses
  • 1 tsp vanilla
  • 1 tsp all spice
  • 2 tsp cinnamon
  • 1 tbsp fresh ginger, minced

Instructions

  1. Preheat oven to 350 and line a loaf pan with parchment paper
  2. Mix sugar, eggs, almond milk, vanilla, ginger and molasses in a bowl
  3. In a separate bowl, mix flour, arrowroot powder, baking powder, cinnamon and all spice
  4. Add the wet ingredients to the dry and gently mix, careful not to over-mix
  5. Pour into the prepared pan and bake at 350 for 40-50 minutes or until a toothpick inserted comes out clean
  6. Cool in the pan for ~5 minutes, then remove and transfer to a cooling rack
